Sweet Potato and St-Guillaume Cheddar Waffles

Sweet potato adds a velvety and slightly sweet texture to waffles. And we love hidden vegetables in protein waffles! 😉 They are perfect for brunch. Make it easy on yourself by preparing them in advance. Then you’ll just have to reheat them in the oven or toaster when serving!

  • 330 ml (1 ⅓ cups) sweet potato, peeled, cubed
  • 3 eggs, whites and yolks separated
  • 310 ml (1 ¼ cups) all-purpose flour
  • 5 ml (1 tsp) baking soda
  • 2.5 ml (1/2 tsp) baking powder
  • 375 ml (1 ½ cups) milk
  • 2 tbsp melted salted butter
  • 250 ml (1 cup) grated St-Guillaume Extra-Strong Cheddar
  • Maple syrup, to taste

  • Place sweet potato cubes in a microwave-safe bowl. Add about 80 ml (1/3 cup) of water. Cover and cook on high for about 8 minutes or until very tender.
  • Drain any remaining water from the bowl. Mash the sweet potatoes with a potato masher.
  • In the bowl of a stand mixer fitted with a whisk attachment (or in a large bowl, using an electric mixer), beat the egg whites on high speed until they form soft peaks.
  • In a medium bowl, sift together the flour, baking soda, and baking powder. Mix well.
  • In another bowl, combine the mashed sweet potato with the milk. Add the egg yolks and melted butter, stirring with a wooden spoon. Mix well until the mixture is smooth.
  • Make a well in the center of the dry ingredients mixture. Pour the liquid mixture into the well. Mix with a spoon until the batter is smooth.
  • Using a spatula, fold in half of the beaten egg whites gently. Add the second half of the egg whites and continue folding until fully incorporated.
  • Add the grated cheese to the batter, continuing to fold gently.
  • Heat a waffle iron to medium-high. Pour batter into the waffle iron mold and cook according to the manufacturer’s instructions. (The amount of batter required per waffle may vary depending on the appliance.) Repeat until all the batter has been used.
  • If desired, reheat the waffles in a toaster (or for a few minutes in an oven preheated to 150 °C (300 °F) to make them crispier.
  • Serve the waffles and drizzle with maple syrup.
