Aged 24 months, this firm, lactose-free cheese is made from unpasteurized (thermized) milk. The texture and taste of this extra-sharp Cheddar are similar to sharp Cheddar, but its flavor is slightly bolder. Use it in an omelet, raclette, or in your soups. Excellent when served at the end of a meal, it pairs well with port or a full-bodied red wine.
