Servings
12 buns

Dough

  • 250 mL (1 cup) warm milk
  • 11 mL (2 1/4 tsp) or 1 packet (8 g) quick-rise bread yeast
  • 15 mL (1 tbsp) sugar
  • 60 mL (1/4 cup) softened butter
  • 2 eggs
  • 875 mL (3 1/2 cups) all-purpose flour
  • 2.5 mL (1/2 tsp) salt

Topping

  • 125 mL (1/2 cup) fresh chives, chopped
  • 45 mL (3 tbsp) cooked bacon, crumbled
  • 30 mL (2 tbsp) oregano, dried or fresh
  • 30 mL (2 tbsp) parsley, dried or fresh
  • 10 mL (2 tsp) garlic, chopped

  • 45 mL (3 tbsp) melted butter
  • 250 mL (1 cup) St-Guillaume Parmesan, grated or shaved
  • 125 mL (1/2 cup) pizza mozzarella Le Gratiné St-Guillaume (optional)*
  • Freshly ground pepper, to taste

  • In a large bowl or the bowl of a stand mixer, pour in the warm milk and dissolve the yeast in it. Let stand for 5 minutes.
  • Then add all the other dough ingredients and stir with a wooden spoon or with the stand mixer fitted with the dough hook until smooth. Add flour as needed so the dough no longer sticks to the bowl.
  • Shape the dough into a ball and place it in a lightly oiled bowl.
  • Lightly oil the surface of the dough as well.
  • Cover and let rise in a warm place for about 1 hour, or until the dough has doubled in size.
  • Meanwhile, combine the topping ingredients in a small bowl and set aside.
  • Place the risen dough on a lightly floured surface and roll it out into a rectangle about 46 x 30 cm (18 x 12 in).
  • Brush the entire surface of the dough with the melted butter.
  • Spread the topping over the buttered dough, then sprinkle with the cheese(s).
  • Roll up lengthwise and cut into 12 buns.
  • Place the buns in a 23 x 33 cm (9 x 13 in) rectangular pan or in two 6-cup jumbo muffin tins, greased and floured. If using a rectangular pan, be sure to leave equal space between each bun.
  • Cover again and let rise for 30 minutes.
  • Meanwhile, preheat the oven to 350°F (180°C), with the rack in the middle.
  • Just before baking, brush the tops of the buns with a little melted butter (optional).
  • Bake for 20 minutes, or until nicely golden. Serve warm!
