  • 30 ml (2 tbsp) butter
  • 250 ml (1 cup) chopped onion
  • 1 bay leaf
  • 500 ml (2 cups) yellow-fleshed potatoes, cubed
  • 750 ml (3 cups) chicken broth
  • 750 ml (3 cups) warm 2% milk
  • 250 ml (1 cup) 35% cooking cream
  • 750 ml (3 cups) grated St-Guillaume Emmental cheese
  • 250 ml (1 cup) 1% milk
  • 125 ml (1/2 cup) cooked and chopped bacon

  • Heat the butter in a saucepan over medium-high heat.
  • Add the onions and bay leaf. Cook for 1 to 2 minutes over medium heat.
  • Add the potatoes and cook for 3 minutes. Now add the broth, 2% milk, and cream.
  • Cook for 15 to 20 minutes, or until the potatoes are very tender. Remove the bay leaf at the end of cooking.
  • Blend until smooth and creamy. Return to very low heat.
  • Add the cheese, whisking vigorously until well melted and incorporated.
  • Season and keep warm.
  • Mix the 1% milk and bacon, then heat over medium heat for 1 minute.
  • Remove immediately and let steep for 30 minutes.
  • Strain through a fine sieve to collect only the bacon-flavored milk. To serve, pour a generous portion of soup into a cappuccino cup.
  • Then froth the bacon milk using an immersion blender or milk frother and serve it on top of the soup.
