Broccoli and Monterey Jack St-Guillaume Cream Soup

Smooth and perfectly melting, Monterey Jack cheese is a wonderful substitute for milk or cream when melted and stirred into this comforting broccoli soup. Monterey Jack is also a lactose-free cheese. By also using lactose-free butter in this recipe, you can make the best lactose-free broccoli and cheese cream soup!

  • 30 ml (2 tbsp) butter (or lactose-free butter)
  • 1 yellow onion, chopped
  • 500 ml (2 cups) leeks, chopped
  • 1 celery stalk, chopped
  • 30 ml (2 tbsp) flour
  • 1 potato, peeled and diced
  • 1 L (4 cups) broccoli, cut into pieces
  • 1 L (4 cups) cauliflower, cut into pieces
  • 1.5 L (6 cups) chicken broth
  • 500 ml (2 cups) grated St-Guillaume Monterey Jack cheese + a little grated cheese for garnish when serving
  • Salt and freshly ground pepper, to taste

  • In a large pot over medium-high heat, sauté the onion, leek, and celery in the butter for 5 minutes, or until the vegetables start to brown.
  • Sprinkle the flour over the vegetables in the pot and stir.
  • Add all the other vegetables and the chicken broth to the pot and stir. Bring to a boil, then reduce to medium heat and cook for 20 minutes.
  • Remove the pot from the heat and, using an immersion blender, purée until smooth.
  • Return the pot to low heat and gradually stir in the cheese. Stir until it’s completely melted and the mixture is an even color.
  • When serving, sprinkle with a little freshly ground pepper and top with a bit of grated cheese.

Tip

  • For a broccoli soup with a slightly bolder flavor, swap the Monterey Jack for an extra-old St-Guillaume Cheddar.
