Homemade St-Guillaume Cheese Bread

Are you one of those people who learned to make bread during the pandemic? You probably realized that it’s quite easy to do and very rewarding. As it bakes, its sublime scent brings comfort to the whole household. And when you taste it, you’ll find that its texture and freshness are incomparable!

There’s a wide variety of cheese bread recipes out there, but the one we’re offering is simply… the best! It will give you two beautiful loaves with a light and tender crumb. Expect them to disappear quite quickly.

We used Marbled Mild Cheddar to give you a bread with a slightly more colorful crumb. But feel free to vary the taste of your bread by choosing another cheese that melts well, such as Sharp Cheddar, Tex-Mex Blend, Monterey Jack, or
Emmental.

Servings
2 loaves

  • 375 ml (1 ½ cups) hot tap water
  • 15 ml (1 tbsp) sugar or honey
  • 22 ml (1 ½ tbsp) or 2 packets (8 g each) rapid-rise bread yeast
  • 250 ml (1 cup) warm milk
  • 2 eggs
  • 10 ml (2 tsp) salt
  • 1.5 L (6 cups) all-purpose white flour
  • 500 ml (2 cups) shredded St-Guillaume cheese of your choice (mild white, yellow, or marbled cheddar, sharp cheddar, Tex-Mex blend, Monterey Jack, or Emmental)

  • In a large bowl or the bowl of a stand mixer, add the hot water, sugar, and yeast. Stir and let sit for 5 minutes.
  • Stir in the warm milk, eggs, salt, and 500 ml (2 cups) of flour. Mix with a wooden spoon or using a stand mixer fitted with a dough hook. Then, gradually add the remaining flour, about 125 ml (1/2 cup) at a time, until the dough begins to pull away from the sides of the bowl. Finish kneading by hand on a clean, lightly floured surface. If necessary, add more flour until the dough is less sticky.
  • Gradually add the shredded cheese by folding the dough over itself several times. Knead for another 2 minutes.
  • Place the dough ball in a large bowl and cover with a damp cloth or plastic wrap. Let the dough rise in a warm, humid spot until it has doubled in size. This should take 30 to 45 minutes.
  • Knead the dough again on a lightly floured surface for 2 minutes. Divide in 2 and shape into loaves. Place in lightly oiled loaf pans. We used non-stick pans measuring 23.5 cm x 13.2 cm (9 in x 5 in). Cover the pans with a damp cloth or plastic wrap and let the dough rise again for about 30 minutes.
  • Preheat the oven to 350°F (180°C) with the rack in the center.
  • Using a knife, lightly score the surface of the loaves with diagonal lines. Optional: using a brush, coat the top of the bread with a little egg wash (one egg beaten with 1 tbsp of water).
  • Bake for 40 minutes or until the top is golden brown. If your bread is already well-browned after only 20 minutes of baking, cover it lightly with aluminum foil and continue baking until the 40 minutes are up.
