How the cheddarization of Le P’tit Frais makes it stand out!

Cheese curds are incredibly popular in Quebec. Have you ever wondered why some packaging mentions “unripened cheese curds” while others say “cheddar curds”? There is indeed a distinction between the two. Here it is.

Like unripened cheese curds, St-Guillaume’s Le P’tit Frais Cheddar Curds is a fresh-of-the-day firm cheese made from pasteurized milk.

The cheese has a moist, supple, and elastic texture. To the nose, our cheddar curds fresh from the vat reveal a sweet scent of fresh milk. Its great freshness is confirmed when it goes “squeak squeak” under your teeth thanks to its remarkable elasticity.

So, where does cheddarization fit into all this?

Cheddarization is a step in the cheesemaking process during which the cheese curd is cut and then stacked, before being turned several times on the table.

Fromagerie St-Guillaume performs as many turns as required to reach the acidity (pH), fat, and moisture levels needed to be qualified as real cheddar.

The numerous turns bring balance to the taste and elasticity of Le P’tit Frais, in addition to allowing the whey to drain properly. The cheddarization process requires more time and energy than other types of cheese curds, but the effort is well worth it!

How does cheddarization make Le P’tit Frais so distinctive?

On the palate, in addition to the taste of fresh, lightly salted* milk, cheddarization gives the cheese a mild acidity and light notes of butter and hazelnut.

Furthermore, thanks to cheddarization, Le P’tit Frais Cheddar Curds will maintain its whiteness and precious elastic texture longer. And even when topped with a piping hot poutine sauce, Le P’tit Frais will keep its shape for our greatest enjoyment!

Can it be frozen?

Of course! But first, you should know that in Quebec, Le P’tit Frais is served at room temperature, after which it must be refrigerated according to the date indicated on its packaging. Once refrigerated, cheese curds will keep for 21 days in the fridge in their original unopened packaging. It is also possible to freeze the cheese curds. Once frozen, it is recommended to let them thaw in the refrigerator before use. You can easily use them in poutine, for example, topped with a delicious hot poutine sauce.
